Raspberry & Clementine Protein Muffins

RASPBERRY & CLEMENTINE PROTEIN MUFFINS

If you were looking for a recipe with a fruity burst of flavour, this is the one you need. With its touches of raspberries, clementines, and vanilla, it is ideal for a warm summer night, or for an easy on-the-go breakfast.

 

Ingredients (12 muffins)

  • 1 cup all purpose flour OR whole wheat flour
  • 2 scoops Smooth Vanilla Isolate
  • 1/2 cup granulated sweetener of choice (we used 1/4 cup brown sugar and 1/4 cup date sugar)
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 2 eggs
  • 1 cup 0% fat greek yoghurt
  • 1/2 cup unsweetened applesauce
  • 1 cup raspberries, plus some for toppings
  • 3 clementines (1 cup), peeled and chopped, plus 1 for toppings

 

Preparation 

  1. Preheat oven to 350°F ;
  2. In a bowl, mix all of the dry ingredients (flour, protein powder, sweetener, baking powder and baking soda) ;
  3. Add the wet ingredients to the dry ingredients (eggs, greek yoghurt and applesauce). Mix thoroughly ;
  4. Add the raspberries and clementines, and mix
  5. Grease or add paper liners to a muffin tray ;
  6. Seperate the muffin batter into 12 even muffins ;
  7. Bake for 45 minutes ;
  8. Let cool and enjoy!

 

Overview 

This original combo will differ from your usual baked goods flavours, and will for sure make you fall in love! However, feel free to use different fruits and to customize the batter base to your liking. You can even add nuts, chocolate chips, coconut flakes, dried fruits, and more. Get creative!
