PROTEIN CARROT MUFFINS
When the weather starts feeling more chilly, it's nature telling you it's time to start baking cozy recipes... And we've got the perfect one for you to try. These protein carrot muffins are super easy to make, taste amazing, and are perfect for meal prepping.
Ingredients (12 muffins)
- 4 eggs
- 1 cup unsweetened applesauce
- 3 cups grated carrots
- 1 cup whole wheat flour
- 1 cup quick oats
- 2 scoops Smooth Vanilla Whey protein
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp vanilla extract
Preparation
- Preheat oven to 350F ;
- In a large bowl, combine all the ingredients until you get a smooth batter ;
- Pour into a muffin mold (makes 12) and bake for 55 minutes ;
- Let cool and enjoy!
