HOT CHOCOLATE PROTEIN COOKIES
It's officially December, which means it's also officially HOLIDAY SEASON! Christmas time is THE perfect time to make cozy holiday recipes both for yourself and for those you love. This Hot Choc Protein Cookie recipe is one delightful, comforting and perfectly sweet treat. Plus, it's healthier, higher in protein, and tastes just like a fresh bakery cookie.
This is most definitely a recipe you'll want to try for yourself! And if you're feeling like sharing, we promise your loved ones will ask for more if you bring these to a Christmas party!
Recipe (12 cookies)
- 1/4 cup salted butter, room temperature
- 1 cup fat free, plain greek yoghurt
- 2 eggs
- 2 tsp vanilla extract
- 1/2 cup brown sugar
- 1/2 cup stevia
- 2 scoops Double Chocolate Isolate protein
- 1/4 cup cacao powder
- 1/2 cup hot chocolate mix
- 1 cup all purpose flour
- 1 1/4 cups oat flour
- 1 tsp baking soda
- 1/2 cup chocolate chunks (we used 1/4 cup dark chocolate and 1/4 cup milk chocolate)
- 1/2 cup mini marshmallows
Preparation
- Preheat oven to 350F ;
- Mix the butter, greek yoghurt, brown sugar, stevia and protein powder together until well mixed. It is preferable to use an electric mixer, but it is still possible to use a whisk ;
- Add the eggs and vanilla, and mix until well combined ;
- In a seperate bowl, add the dry ingredients and mix until well combined ;
- Add the dry ingredient mix to the wet ingredients and mix ;
- Add the chocolate chunks and mini marshmallows ;
- Line two baking tins with parchment paper and make 12 even cookies ;
- Bake for 15-18 minutes ;
- Let cool and enjoy!
