FLUFFY PROTEIN BANANA MUFFINS
If you were looking for a healthier alternative to fluffy, big bakery muffins, then you've come to the right place. These protein banana muffins are the perfect copycat to your favourite bakery sweet and comforting goodies, but are higher in protein and nutrients, and lower in fat and sugar.
The best part is you can even use this recipe as a base for banana bread - the only difference is you'll have to bake it for longer.
Ingredients (12 muffins)
- 3 very ripe bananas
- 3/4 cup greek yoghurt
- 1 egg
- 2 egg whites
- 2 tbsp unsweetened applesauce
- 1 tbsp vanilla extract
- 2.5 scoops Maple Brown Sugar Isolate protein
- 1.5 cups oat flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- Cinnamon to taste
- Optional : 1/4 cup stevia
- Chocolate chips to taste
Preparation
- Preheat oven to 350°F
- Mash the bananas and add them to a large mixing bowl ;
- Add the wet ingredients (greek yoghurt, egg and egg whites, applesauce, vanilla extract) and whisk ;
- Add the rest of the ingredients and mix until everything is well combined ;
- Put muffin molds in a muffin tray and evenly separate the batter ;
- Bake for 30 minutes ;
- Let cool and enjoy!
